Curry Chicken Penne
Ingredients:
- 1 pack of Roma Pasta Penne
- 500g of chicken breast, cut into little pieces
- 2 carrots, thinly diced
- 1 red bell pepper, diced
- 1 small onion, diced
- 4 cloves of garlic, crushed
- 1 tablespoon of chopped parsley
- 1 tablespoon of mustard
- 1 teaspoon of english sauce
- Salt, pepper, and curry to taste
Preparation:
- Cook the pasta as instructed on the package. Drain and set aside.
- Use a bowl to mix the chicken with mustard, english sauce, salt, pepper, and curry.
- In a pan, stir-fry the onion and garlic until browned. Then, add in the curry chicken and cook for 5 minutes, stirring regularly.
- Add the carrots and parsley (you could add any vegetables you prefer, like broccoli), and cook for another 5 minutes or until the vegetables are tender.
- Mix the pasta with the curry chicken and serve.
