Elbows with Tuna, Avocado, and Strawberries
Ingredients:
- 1 pack of Roma Elbows
- 2 Avocados, diced
- 2 cans Tuna in water, drained
- 2 stalks of celery, chopped
- 1 cup cilantro Leaves
- 1 cup of unsalted peanuts
- 1 cup of sliced strawberries
For Vinaigrette:
- 2 lemons juice
- 1 tablespoon of oregano
- 1/4 cup of olive oil
- Salt and pepper to taste
Preparation:
- Cook the pasta as instructed on the package.
- Mix the pasta, tuna, celery, strawberries, half the peanuts, and avocado in a bowl.
- Mix the lemon juice with the oregano, salt, and pepper in a cup to make the vinaigrette. Pour in the olive oil last and mix it all well.
- Now mix it all together, serve, and decorate with avocado slices and more peanuts on top.
