Penne Alla Vodka with Chicken
6 serves | 450 Cal (Per serving).
Ingredients:
- 1 pack of Roma Pasta Penne
- 3 tablespoons of olive oil
- ½ cup of thinly cut onion
- 400 g of chicken breasts, cut into pieces
- 10 white mushrooms, chopped
- ¼ cup of vodka
- ¼ cup of heavy cream
- ¾ cup of low-fat milk
- ½ cup of grated parmesan
- 1 ounce of tomato paste
- Parsley to taste
- Salt and pepper to taste
Preparation:
- Cook the pasta following the instructions on the package.
- Saute the onion in a big pan with olive oil for 5 minutes at medium heat.
- Turn up the heat to add the chicken and the mushrooms. Let it brown for another 5 minutes.
- Add the vodka and wait until the alcohol evaporates. Then add in the heavy cream and tomato paste.
- Lower the heat and season with salt and pepper. Serve hot.
