Penne Rigate with Chili

Ingredients:
- 450 g of Roma Pasta Penne
- 2 teaspoons of salt
- 1 cup grated parmesan
- 1 and 1/2 cup of tomatoes, diced
- 3 tablespoons of hot chili paste.
- 1/3 cup of scallion, thinly chopped
- 1 teaspoon of 1 lemon zest
- 1 teaspoon of lemon juice
- 1/3 cup of olive oil
Preparation:
- In a deep pan, pour 3 cm of water (around 4 cups) and boil it.
- Add the pasta and salt. Cook, stirring regularly for 9 minutes; there should be little water left in the pan.
- Sprinkle the parmesan over the pasta and mix. Add the tomatoes, chili paste, lemon zest, lemon juice, olive oil, and stir some more until it’s all well combined.
