Penne Salad with Olives
Ingredients:
- 1 pack of Roma Penne Pasta
- 10 cherry tomatoes, cut in half
- 1 red onion, diced
- 1 cup of diced kale
- ½ cup of black olives
- ¼ teaspoon of mustard
- 2 tablespoons of balsamic vinegar
- 2 cloves of garlic, finely chopped
- 2 tablespoons of Roma Basil Olive Oil
- Salt to taste
Preparation:
- Cook the pasta following the instructions on the package. Drain and let it cool down.
- Prepare a vinaigrette with the mustard, salt, garlic, olive oil, and balsamic vinegar.
- Use a bowl to mix the pasta, onion, cherry tomatoes, kale, olives, and the vinaigrette.
- Keep it in the refrigerator until it’s time to serve.
