Tagliatelle Caprese with Bacon

Ingredients:
- 1 pack of Roma Pasta Tagliatell
- 60g of bacon
- 3 clove of garlic, crushed
- 200g of mozzarella
- 1 cup of cherry tomatoes, sliced
- 1 cup of chopped parsley
- 2 tablespoons of olive oil
- Salt and pepper to taste
Preparation:
- Cook the pasta following the instructions on the package. Drain and set aside.
- Without adding any oil, cook the bacon strips in a pan until they are crispy, and then remove them from the pan.
- Pour 1 tablespoon of olive oil into the same pan and stir-fry the garlic until browned.
- Add the tomatoes and stir-fry for 5 minutes. Sprinkle the parsley and mix.
- Add the tomato sauteed to the pasta. Crush the bacon strips and add them too.
- Add the other tablespoon of olive oil, salt, and pepper, and mix it all well.
- Cut the mozzarella into little cubes and add them to the pasta. Mix and serve.
