Ziti with Chicken and Spinach Pesto
Ingredients:
- 250g of Roma Pasta Ziti
- A handful of fresh spinach
- ½ cup of basil
- 3 tablespoons of toasted peanuts
- 6 tablespoons of olive oil
- ½ teaspoon of salt (Pesto)
- 2 chicken breasts.
- Salt and pepper to taste (Chicken)
- 1 cup of parmesan
Preparation:
- Cook the pasta as instructed on the package.
- Cut the chicken into pieces and add salt and pepper to it. Then, pour some olive oil into a pan and stir-fry the chicken until browned.
- Put together the spinach, basil, salt, peanuts, parmesan, and olive oil in a blender and run it until you get a smooth mix.
- Mix the pasta, chicken, and spinach pesto, and serve.
